Quick, Simple and Healthy Breakfast: Spinach + Cheese Omelette in a Mug (Serves 1)

Spinach + Cheese Omelette in a Mug (Serves 1)
  • 1/2 cup spinach leaves – wilted (place spinach in mug with 2 tablespoons of water and put in microwave for 1min)
  • 1 egg
  • 1/3 cup grated low fat cheese
  • Salt and pepper
  • Optional: Ham/mushrooms/tomato/capsicum
Method
  1. Place spinach in a mug and add 2 tablespoons of water. Heat on high for 1min in microwave to wilt
  2. Drain water
  3. Crack egg in cup with spinach and whisk lightly with fork
  4. Add cheese
  5. Mix well
  6. Place in microwave for 2mins until cooked
  7. Season with salt and pepper
