Blueberry, Vanilla and Coconut Overnight Oats – serves one


½ cup oats

½ cup light milk

¼ Packet of blueberries

A handful of coconut flakes/shredded coconut


Vanilla bean paste/extract



  1. Place oats and milk in a jar. Stir until combined.
  2. Stir through coconut, cinnamon and vanilla.
  3. Top with blueberries.
  4. Refrigerate overnight.
  5. Top with yoghurt prior to eating (optional)
