Spinach + Cheese Omelette in a Mug (Serves 1)

1/2 cup spinach leaves – wilted (place spinach in mug with 2 tablespoons of water and put in microwave for 1min)
-
1 egg
-
1/3 cup grated low fat cheese
-
Salt and pepper
-
Optional: Ham/mushrooms/tomato/capsicum
Method

Place spinach in a mug and add 2 tablespoons of water. Heat on high for 1min in microwave to wilt

Drain water
-
Crack egg in cup with spinach and whisk lightly with fork

Add cheese
-
Mix well
-
Place in microwave for 2mins until cooked

Season with salt and pepper
